This is something I am switching too. This has given me the motivation to give up dairy. Dairy, according to the article, is one of the most resource intensive processes. I can reduce my carbon footprint just by using soy milk and soy cheese because that will be less consumption thus less resources used to make less dairy products. And I use allot of dairy products. So unless I have to, I will not be using dairy in my diet at all.

As well, I will be utilizing local farmers markets, apple farms, and trying to buy products that are made within 100 miles of me. It's time to take the next step in my personal evolution.
